Gungo peas (pigeon peas) are nutritional powerhouses, offering high plant-based protein, lots of fibre for digestion and fullness, essential minerals (potassium, magnesium, iron) for heart/bone health, and antioxidants to fight inflammation, supporting weight management, blood sugar control, and strong immunity, making them great for vegetarians/vegans and overall wellness.
Culinary suggestions...
Drain the liquid. Add peas to your pot, 1 can of coconut milk, 400 ml of water, scallion, thyme, allspice, salt, and butter. On a medium heat and boil for 20 minutes. Next, rinse your rice and add to the pot. Cook for 20 minutes, occasionally stirring. Once all liquid has evaporated, and rice is soft with no hard grains, use a fork to fluff and your gungo rice and peas should be ready!
